This Hearty Italian Minestrone Soup is everything I love about simple, rustic cooking—fresh vegetables, tender white beans, little bites of pasta, and a rich, savory tomato broth that brings it all together. Minestrone is one of those wonderful Italian soups that doesn’t need to be complicated to be delicious. In fact, its beauty is in its simplicity. A handful of everyday ingredients come together to create something hearty, wholesome, and packed with flavor. It’s the kind of recipe that welcomes whatever seasonal vegetables you happen to have on hand, making it just as practical as it is delicious.
And while this soup is especially comforting on chilly fall and winter evenings, it’s equally lovely when the garden is overflowing with fresh zucchini, green beans, and tomatoes. Whether you’re feeding a hungry family or making a pot to enjoy throughout the week, this is one of those recipes that deserves a permanent place in your kitchen.
Why You’ll Love Hearty Minestrone Soup
- Loaded with garden vegetables. Zucchini, green beans, carrots, celery, and tomatoes bring freshness, color, and wonderful flavor to every bowl.
- Hearty without being heavy. Tender white beans and pasta make this soup filling and satisfying without needing meat or cream.
- Made in one pot. Simple ingredients and minimal cleanup make this a great option for busy weeknights.
- Perfect for using seasonal produce. Minestrone is incredibly forgiving, so you can easily swap vegetables depending on what you have available.
- Even better the next day. As the soup rests, the herbs, tomatoes, and vegetables continue to develop flavor.
- Freezer-friendly with one small adjustment. Leave out the pasta until reheating, and you’ve got an easy homemade meal ready whenever you need it.
What You’ll Need for Hearty Minestrone Soup
Shop the recipe on Amazon – click on product links to purchase
- Shallot – One large shallot, has a milder, sweeter flavor than onion.
- Celery – Always adds fresh flavor to soup.
- Carrot – Organic and homegrown have a sweeter flavor.
- Garlic – Fresh minced garlic has a stronger flavor than jarred.
- Zucchini – A small zucchini works best. If you have a larger one, remove the seeded middle and just use the firmer parts.
- Green Beans – Freshly frozen from the garden is what I use, but fress or canned will work.
- Chicken Broth – 4 cups of good chicken broth.
- Canned Tomatoes – Whole canned tomatoes, crushed with your hands.
- Italian Seasoning – Your favorite blend or Italian seasoning found on Amazon.
- Spinach – Fresh spinach or baby spinach.
- Ditalini – Very small tube shaped pasta.
- Olive Oil – Good olive oil. I use extra virgin.
- S & P – Salt and pepper to taste.
Make It Your Way
Ditalini is a classic choice, but small shells, elbow macaroni, or orzo work just as well.
Switch up the beans, use kidney beans or great northern beans.
Add a little heat with a pinch of crushed red pepper.

Hearty Minestrone Soup
Ingredients
Method
- Saute shallot, celery and carrot in olive oil over medium high heat until just softened. Add garlic and saute quickly being careful not to burn.
- Add zucchini, green beans, broth, tomatoes, Italian seasoning and spinach.
- Season with salt and pepper. Simmer for 30 minutes.
- Serve minestrone soup over cooked ditalini pasta. This keeps the pasta from expanding in the soup. Top with freshly grated parmesan cheese.
- Boil ditalini until al dente. Drain and set aside.

SALTY OWL TIP
Cook the pasta seperately and put a little in each bowl, then pour soup over. This keeps the pasta from soaking up all the soup broth while it sits.
