I just happened to have a few brioche slider buns that needed some love. And then I remembered this lobster slider from The Optimist in Nashville and that is how a recipe is created. A very simple slider that feels super indulgent.

The key to taking this to the next level is the perfect grilled edges on the slider bun and being extra careful to keep the Dungeness crab in lump form. I serve two sliders per person for a meal or one if you need a fancy appetizer or party food.

Ingredients in Dungeness Crab Sliders

  • Crab – Fresh Dungeness crab is our local favorite. You could try substituting your favorite local crab or even lobster.
  • Rolls – Brioche slider rolls are a little sweet and buttery which pairs perfect with Dungeness crab.
  • Garlic – Freshly grated garlic.
  • Mayonnaise – Best Food mayonnaise is my go-to for creamy texture.
  • Lemon – Freshly squeezed lemon juice.
  • Chives – Freshly chopped chives from the garden.
  • Smoked Paprika – The hint of smokiness adds an extra layer of flavor.
  • Butter – Real full fat plain ole butter.

Ingredients
  

  • 1 whole Dungeness crab shelled (about .25 to .50 pounds crab meat after removing shell)
  • 1/4 cup butter
  • 4 Brioche slider buns
  • 2 cloves garlic minced
  • 1/2 cup mayonnaise
  • 1/2 lemon juiced
  • 1/4 tsp. freshly grinded salt
  • 1/8 tsp. freshly grinded black pepper
  • 1 Tbsp. fresh chives chopped
  • 1 tsp. smoked paprika
  • 1 lemon sliced for serving

Method
 

  1. In a large pan melt 1 Tbsp of the butter of medium high heat. Place slider buns inside facing down in pan and grill until toasted around the edges. You may need to work in batches. Set aside.
  2. Add remaining butter to pan. When melted, add minced garlic, stirring for a minute or so. Add Dungeness crab to the pan and stir to coat. reduce heat to medium low. Let warm while you make the sauce.
  3. Combine mayonnaise with fresh lemon juice, salt and pepper.
  4. Assemble to sliders by placing 1/4 of the warmed Dungeness crab on each roll, top with a dollop of lemon mayonnaise, fresh chives and smoked paprika. Serve with French fries and lemon slices.
