Ingredients
  

  • 1 head broccoli cut into bite size florets
  • 7 slices bacon cut into lardons
  • 1/4 cup shelled salted sunflower seeds
  • 1/4 cup craisins or dried cranberries
  • 1/4 cup Pecorino cheese grated
  • 1/8 tsp. cracked black pepper
  • 1/2 cup dressing recipe below
Dressing
  • 1/2 cup mayonnaise
  • 1 tsp. apple cider vinegar
  • 1 Tbsp. white granulated sugar
  • 1/8 tsp. freshly ground salt
  • 1/8 tsp. freshly ground black pepper
  • 1 splash whole milk

Method
 

  1. Blanch broccoli florets: Bring a pot of water to a boil, drop in broccoli, blanch for 1 minute, remove to an ice water bath until cooled through. Pat dry.
  2. Place bacon lardons in a pan over medium high heat, cook until fat is rendered and lardons are crispy and cooked through. Remove to a paper towel to drain fat.
  3. Combine blanched broccoli florets, cooked bacon lardons, sunflower seeds, craisins, Pecorino cheese and 1/2 cup dressing in a medium bowl. Season with salt and pepper.
Dressing
  1. Place mayonnaise in a small bowl, stir in apple cider vinegar until combined. Stir in sugar, salt and pepper. Thin with a splash of milk to desired thickness.
