  • Strawberries– Fresh strawberries
  • Strawberry Jam – Homemade strawberry jam or use pureed strawberries with cornstarch slurry.
  • Flour – All purpose flour for the crust.
  • Butter – Cold butter.

Ingredients
  

Crust
  • 2 cups flour
  • 1 cup butter grated
  • 1 + Tbsp cold water
Strawberry Filling
  • 4 pints strawberries hulled
  • 1 pInt strawberry jam
Whipped Cream
  • 1 cup heavy whipping cream
  • 2 Tbsp powdered confectioners sugar
  • 1 tsp vanilla

Method
 

Crust
  1. Combine cold grated butter with flour until crumbly. Starting with 1 Tbsp cold water, add to flour mixture until dough forms. You may need to add more cold water to form dough ball. Cover ball with saran wrap and refrigerate for at least 15 minutes.
  2. Roll out dough to a circle larger than your pie dish. Press into pie dish and form crust. Cut off excess dough. Place in refrigerator for 60 minutes or freezer for 30 minutes. This step is necessary to avoid pie crust shrinkage when baking. Preheat oven to 425 degrees while dough is chilling.
  3. Remove chilled pie crust from refrigerator and prepare for baking. Place parchment paper over pie crust and fill with dried beans or pie weights. Bake for 15 minutes.
  4. Remove parchment paper and beans or pie weights. Using a fork prick the bottom crust a few times to allow steam to escape. Reduce heat to 350 degrees and continue baking for about 20 minutes or until golden brown. Remove from oven and cool completely.
Strawberry Filling
  1. Place cleaned and hulled strawberries in large bowl. Combine with strawberry jam. Arrange strawberries in prepared pie crust. Place pie in refrigerator for several hours to allow strawberries to set. When ready to serve, prepare whipped cream.
Whipped Cream
  1. Combine heavy cream, powdered confectioners sugar and vanilla in a stand mixer bowl and whip using wire whip attachment until thick and creamy. Serve a dollap on each slice of pie.
