Out West’s Lemon Arugula Pasta Salad combines cellentani pasta, arugula, pine nuts and cherry tomatoes in a light lemon vinaigrette dressing. This fresh and flavorful pasta salad skips the mayo and gets tossed in a light vinaigrette. The lemon juice in the dressing makes this salad light and refreshing and the cherry tomatoes add a pop of sweetness. Making it the perfect side dish for those Summer potluck parties. This Lemon Arugula Pasta Salad is a take on one of my favorite pasta salad’s from the local grocery store. Originally with just spinach, pine nuts and parmesan. I added spicy arugula, sweet cherry tomatoes and lemon zest to make this…

Panzanella Salad is the perfect summer dinner salad with vine ripe tomatoes, fresh basil, mozzarella, cucumber, red onion and crusty French bread. Fresh From the Garden My first summer craving is always Panzanella Salad. Juicy tomatoes, crusty French bread and fresh basil paired with crunchy cucumber, thinly sliced red onion and fresh mozzarella in a red wine vinaigrette. It screams summer and celebrates all of the goodness we waited all winter for. I like to let all the vegetables sit and soak up the flavor before adding the crusty French bread. Tonight I’m using rosemary bread that’s been toasted until extra crunchy. Sometimes I use Kalamata olive bread, which is…

Mushrooms and Greens Lasagna combines layers of creamy mornay sauce with wilted bok choy to create a meatless favorite. The secret ingredient in this rich and creamy mushroom lasagna? It’s bok choy! Thinly sliced ribbons of bok choy pair perfectly with earth mushrooms an sharp white cheddar sauce. Perfect for Lent Fridays or Meatless Mondays. It’s packed with vitamins AND you get your cheese fix at the same glorious time! If you’re like me, you could live off cheese, wine and French bread. That’s my go-to. Yep, I come home from my daily job, pour a glass of wine, tear off a piece of french bread and start cooking. I…

Who doesn’t love a good mac-n-cheese? My favorite is Stouffer’s Macaroni and Cheese, yes, found in the frozen section at the grocery. Maybe it’s because I grew up eating it, OR maybe because it’s rich, tangy, creamy and addictively good. The top gets all golden brown and crusted over and when you scoop your spoon in, it’s pure creaminess. Many recipes have come close, but this is the best yet. It all came together when I got a promotional box of cheese from our PNW local Tillamook Cheese. It’s my favorite cheese and that says a lot because I LOVE CHEESE! I wanted a simple recipe with the fewest ingredients…
