Country Style Potatoes are thick sliced yellow potatoes fried in bacon fat for an extra crispy crust with red pepper, jalapeno and onion.

Ingredients

  • 2 large Yukon Gold potatoes sliced 1/4 inch thick
  • 1 large spoonful bacon fat
  • 1/2 red bell pepper large chopped
  • 1/4 white onion sliced
  • 1 jalapeno whole
  • salt and pepper

Instructions

  • Prepare a steamer basket. Place sliced potatoes in basket and steam until you can almost pierce with a fork, but still a little hard. This process helps the potatoes fry up faster. If you don't have a steamer basket, you can gently boil potato slices.
  • Place a large frying pan over medium high heat. Add a spoonful of bacon fat. When melted, add red bell pepper, onions and jalapeno, cooking for about a minute or so. Push over to one side of the pan. Add steamed potato slices, so each slice touches the pan the best they can. Let them get browned and crispy then flip over, stirring together with peppers and onion. Cook until each side it nice and browned. Season with salt and pepper.
